Of recent publications, A Guide To Hymn Playing by Rebecca Bonam McDaniel and Duane Ream is perhaps one of the best written reference books for hymn improvisation. It is not a teaching book, in that there is not a "Step 1, Step 2, Step 3...". It is divided up into chapters, with each one covering a different aspect of hymn playing. In each situation, a hymn example is given, as well as a possible improvisation based on that example.
The final ten pages consist of a huge reference center for books dealing with the different aspects of hymn playing. This is a huge book, and well worth the cost.
